As you All know today is EID .. 
YEAH!!!  πŸ€©Typically why the delay...  πŸ˜Œ you sensed it right !!!   BIRYANI it is ...

 So as of yesterday, I was supposed to make a 🌯CLASSIC MEXICAN BURRITO, for lunch today ... 

I boldly took a call and ♻️ Recycled it down...to make this BIRYANI BURRITO,  A safety mask to your Biryani 😷lolzz trendy Right????

It sounded so whacked out that My hubby said Nah😡, I want My biryani, As Biryani😏πŸ€ͺ... DON’T mess with it !!!! 

Grrrr... Plan B Now Lets stick to a Classic... As it never dies😁

Later then My friend SHERWIN asked  me what’s on the Menu??
 I said well I have No Mutton πŸ‘ , No Chicken πŸ“... πŸ™‡‍♀️πŸ™‡‍♀️But I do have πŸ§šπŸΌ‍♂️Prawns 🦐 Crab πŸ¦€ and pomfret 🐟 .

NOW YOU KNOW WHERE WE ARE GOING ,....πŸ‘…

So ... My tour Began with, 
To create a great broth in which my Rice 🍚 and Gravy would be cooked.

Crowne Plaza( NOUKHAZA) 🦞Lobster Bisque
Finger Sushi Kuwait: Shrimp πŸ€  and Crab πŸ¦€ maki Premium Top seller. 
Daughter’s Favorite colors, purple and pink 🀦‍♀️- had to take a chance.!!!



THOD PHODH PRAWN BIRYANI

Ingredients for stock:
Ginger
Garlic 
Cinnamon 1
Cardamom 1
Fish trimmings (sides, fins, tail, bones)
Shrimp tails and heads
Green bell pepper

SautΓ© all the ingredients in deep dish to make a broth.
Add a lot of water for boiling rice,  some for gravy.

Boil on slow for 45mins to an hour... strain and mash the ingredients.

In the stock boil fresh crab meat and saffron, salt (this helps in make the flavor more rich and sweeter.)

Simmer the rice in this broth till it  puffs up and is par done, strain the 🍚  and keep the broth aside.

Ingredients for prawn Masala:
5large Fried onions 
5large tomatoes 
Ginger one big piece
Garlic half a pod
5green chillies
Coriander and mint hand full of each

Method
  • Fry onions slices with cinnamon, cardamom, and clove one of each, till onions are evenly golden brown.
  • Remove keep few onions for garnish
  • Add ground paste of ginger, garlic, green chilies, coriander and mint, fry it along with the remaining onions.
  • After the oil separates, add chopped tomatoes and salt fry till puppy and mashed
  • Once oil leaves put turmeric, and coriander powder, shrimps. And crab meat.
  • Allow the water to dry off and the oil to seep through the sides.. 
  • Semi dry state, add half a glass of water and boil on high gas for 2 mins.
  •  Add remaining broth to the prawn curry.

Aligning the Biryani:

Layer half the seasoned 🍚 rice at the base
Then skim the prawn pieces and arrange them well over the rice, pour the gravy, half the amount to coat the prawns.

Do not over do the gravy . 

Then the second layer of rice, add color as alternate swirl around the dish, fried onions and put it in the over for 30mins, or on real slow gas for 45mins.

The final garnish with seared fish fillet, chopped coriander leaves, fried cashew nuts, almond slivers and raisins and serve, with remaining boiled gravy on the side.
