By the time I walk ๐ถ๐ป♀️๐ถ๐ป♀️๐ถ๐ป♀️๐ถ๐ป♀️Literally specifying WALK AND DRAG MY SELF OUT OF THERE (rich and heavy food) I smell๐๐ฝ LIKE A walking ๐ถ๐ป♀️ MASALA SHOP๐คฃ๐คฃ !!!!!!
though THIER FOOD IS OUTSTANDING!! ๐คฉ

So FINALLY after 4MONTHS ๐ Our SOUTH INDIAN NIGHT...
DONT WORRY!!! NON OF US HAD OUR LUNGIS ON !!!!
Here we go...
OUR MENU WAS
DOSA( credits to FELICIAS BATTER)
SAMBHAR
ROASTED COCONUT PRAWN CURRY
INGREDIENTS for Roasted coconut paste
Coconut 500gms
Kashmiri red chillies 10
Cumin seeds 2 tablespoon
Ginger 1inch
Garlic cloves 12 pieces
1 Onions thinly sliced
Ingredients for Curry
Tamrind paste 2tablsoops
Three green chillies
Curry leaves
Coconut oil
Mustard seeds
Ladies fingers
Onions big cubes
PRAWNS 2kilos small size
Ground coconut paste
METHOD:
Roast all ingredients for the coconut paste in a dry woke till reddish brown evenly
Grind with salt and water..
Stack up excess in the freezer if required ...
For the CURRY:
Coconut oil, mustard seeds, curry leaves, green chillies , Onions, ladies fingers... Fry till golden brown ....
Add coconuts paste tamarind make it dry...
Add prawns prawns mix and cover with a lid for 15mins
Don’t add extra water.. as the prawns leaves it’s water and perfect enough to give a great fishy stock flavor...
Check sourness and Seasoning ..
SAMBHAR:
Sambhar powder ingredients:
Kashmiri Red chilies 10
5tablespoons roasted coconut
Fennel seeds 2tablespoons
Cumin seeds 2tablespoons
Fenugreek seeds 1tablespoon
Curry leaves ( 25to 30 pieces)
Roast and Dry grind and keep in a bottle:
Sambhar ingredients (first step )
Oil
Mustard seeds
Curry leaves
Fenugreek seeds
2tomatoes(big cubes)
Salt
Tamarind paste
3tablesoops Dry roasted sambhar powder
175 gms Pre soaked CHANNA daal
METHODS:
Normal oil , splutter mustard seeds, add fenugreek seeds, curryleaves, salt, daal and tomatoes add sambhar powder...
Water and pressure cook
Once it’s ready mash up daal with little water and tamrind paste for the consistent required...(DONT MAKE IT WATERY)
Final stage:BEFORE GUEST ARRIVE
INGREDIENTS:
8 Ladies fingers small size
8 Green bean cut into 1/2 inch
8 big cubes of Pumpkin
1medium potato cut into 8 big cubes
METHOD:
In a larger cooker
Add Coconut oil , mustard seeds, 3spoons Sambhar powder, aesofatida powder, Curry leaves, Fenugreek Greek seeds ,1/2teaspoon
Cumin seeds 1/2 tspoon
Add veges, salt, sambhar from stage one adjust water and pressure cook for on veges to be cooked on high whistle one on slow..
Once done check tangyness and spice adjust accordingly serve with a serving spoon of Ghee...
LAST NIGHT THE SAMBHAR WAS OUR FOCAL POINT ....
NOTHING LIKE THIS WARM COMFORTING FOOD DURING MONSOONS
Been raining here past three days continuously..๐
