1/2 Avocado diced
6cherry tomatoes Halves
1garlic clove grated
3prunes
Date molasses dressing /balsamic vinegar
Olive oil
Sea salt
Black pepper
Toss it and serve in avocado skins
WILD HERB ROASTED POTATOES
6 baby potatoes boiled
2 garlic cloves chopped
Mixed bunch of mint, parsley, rosemary, coriander(what ever you have)
Salt
Pepper
Olive oil
METHOD:
Olive oil in a pan,
Roast garlic and herbs
Add boiled potatoes salt and pepper glaze it till golden brown ..
Enjoy your light meals for DINNER
